This cheese is made from cow's milk produced with the same technique as Monte Veronese PDO. While still fresh, it is placed in contact with the pomace of the grapes placed in drying with Amarone wine.
After contact and storage, the cheese is aged from 8 to 19 months. It is a rare delicacy! During aging in wine it absorbs an important quantity of product which penetrates centripetally towards the center. Subsequently, during maturing, the drying of the cheese tends to evolve the flavors while maintaining the evolution of the Amarone.
